This coffee was meticulously grown and processed by Edinson Argote, a farmer located in Huila, Colombia. I met one of Edinson's dear friends, Ivan Pulgarin who is based in Queens, NYC. We met at a cupping that he had held in Brooklyn. I was intrigued by the harsh but sweet pineapple, and passionfruit this coffee possesses. I wanted to grow this relationship, I roasted some samples from him and dialed in a perfect pour-over recipe. I felt this coffee had characteristics that no other coffee I have tasted contained. Later on, we discussed future plans. I will be roasting 24kg of this micro-lot and then we will craft a new coffee together which will be released at a later date. Edinson will only be supplying this coffee to myself and one other roaster, making for a delicious and exclusive drop.
